Ingredients
The Loaf
- 1/2 cup of butter – melted. I use unsalted.
- 2 eggs.
- 3/4 cup of sour cream.
- 1 teaspoon of vanilla extract.
- 1/4 cup of milk.
- 1 cup of sugar.
- 2 teaspoons of baking powder.
- 1/4 teaspoon of salt.
- 1 and 1/2 cups of blueberries.
- 1 and 3/4 cups of flour.
The Crumble
- 3-6 tablespoons of butter – melted.
- 1 cup of brown sugar.
- 1 cup of flour.
- 1 tablespoon of cinnamon.
We are a family who LOVE cinnamon so you may want to reduce these quantities – but for us, they give that perfect cinnamon kick!
Instructions
The Loaf
- Pre-heat your oven to 350°F or 175°C.
- Butter a 9×5 loaf pan or use baking paper. I prefer to use baking paper because it’s easier to pull out.
- Mix together the butter and sugar in a bowl. Make sure your butter is melted – it makes this part easier!
- Once the sugar and butter are combined, add in the vanilla extract, eggs, milk and sour cream. Mix together until all is combined.
- Add the flour, salt and baking powder into a separate mixing bowl and mix together.
- Pour the flour mixture into the butter mixture and mix together.
- Add in your blueberries and mix to spread them around the mixture.
- Pour your loaf mixture into your loaf pan.
The Crumble
9. Add your flour, sugar and cinnamon into a bowl. Gradually add the butter. I like a drier, crumbly crumble so I prefer to do this gradually to get the texture that I want.
10. Use your fingers to gently and quickly rub the ingredients into a soft crumble. Don’t overdo it!
11. Sprinkle your crumble topping over the top of your loaf mixture.
Cooking
12. Place into the oven for 50-75 minutes. After the 50 mark keep checking every few minutes. Place a toothpick into the loaf and when it comes out clean, it’s ready!
13. Leave on the countertop to cool down. Once cool, cut into slices.
