Check out this chicken and bacon fried rice recipe that’s a quick and easy meal.. But also super tasty! It’s one of my go-to evening meals, especially on weeks when I’m too exhausted to be doing anything super hard work.

Ingredients
- Chicken
- 2 tablespoons of vegetable oil.
- 3 eggs.
- 5 cups of pre-cooked and cooled rice.
- 1/4 cup of soy sauce.
- 1 tablespoon of sesame oil.
- 1 1/2 chicken breasts.
- 1 cup of diced bacon.
- Pepper and salt to season.
- Diced onions.
- 3/4 cup of frozen peas.
Instructions
This recipe is best with rice that has previously been cooked and cooled but it can be done with rice that you have just cooked if you want to. I have done this myself a few times when I haven’t been organized enough and made rice in advance.. But it definitely tastes better if you cook the rice the day before, store and then pull out to use.
- Place the chicken breasts into a saucepan of boiling water and boil until cooked and tender.
- Once cooked, shred the chicken.
- Place a tablespoon of vegetable oil in a pan. Crack the 3 eggs into the pan and mix like scrambled eggs.
- Add another tablespoon of vegetable oil into the pan and then add the diced bacon and onions to cook.
- Once cooked, add the rice and peas.
- Stir well and then add the shredded chicken.
- Add the soy sauce and sesame oil.
- Finally, add some salt and pepper to season.
- I leave to cook until everything has seasoned well together and then serve.
