Frankenstein Cookies Recipe Halloween Macarons

Shopping List for Frankenstein Cookies
Macaron Shells:
- 1 cup powdered sugar
- ¾ cup almond flour
- 2 large egg whites (room temperature)
- ¼ cup granulated sugar
- Green gel food coloring
Filling:
- ½ cup unsalted butter (softened)
- 1 ½ cups powdered sugar
- 2–3 tablespoons heavy cream or milk
- 1 teaspoon vanilla extract
Decoration:
- Candy eyes (or make your own with icing)
- Black decorating gel or melted chocolate

Step-by-Step Frankenstein Cookies Recipe
1. Make the Macaron Shells
- Line two baking sheets with parchment paper.
- Sift powdered sugar and almond flour together into a bowl.
- In another bowl, beat egg whites until foamy. Gradually add granulated sugar and beat until stiff, glossy peaks form.
- Add green gel food coloring and gently fold in the almond flour mixture until smooth and flows like lava (the batter should slowly drip off a spatula).
- Pipe small circles onto baking sheets. Tap trays on the counter to release air bubbles.
- Let them sit for 30–60 minutes until the tops are dry to the touch.
- Bake at 300°F (150°C) for 15–17 minutes. Allow to cool completely before filling.
2. Make the Filling
- Beat butter until creamy.
- Add powdered sugar, vanilla, and cream/milk. Mix until smooth and fluffy.
- Pipe onto half of the cooled macaron shells, then sandwich with the other half.
3. Decorate Frankenstein Faces
- Use black decorating gel or melted chocolate to add hair, stitches, and mouths.
- Stick candy eyes on with a dab of icing.
- Let set before serving.
Tips for Success
- Use gel food coloring instead of liquid so it doesn’t thin your macaron batter.
- Resting the shells before baking is essential to avoid cracks.
- If you’re short on time, you can also decorate store-bought macarons or sandwich cookies instead of making them from scratch.
