In this blog post today I’m sharing with you how to make snowman cinnamon buns. We love making these as a winter treat in our classroom.. And I love watching how creative my students get designing their own snowmen. Read on below to find all the instructions you need for creating this snowman cinnamon bun with your students – or at home!

Ingredients You Need
Dough:
- 1 cup of warm milk (110°F/45°C)
- 1 packet (2 ¼ teaspoons) of active dry yeast
- 1/3 cup of granulated sugar
- 1/2 cup of unsalted butter, melted
- 2 large eggs
- 1 teaspoon of salt
- 4 ½ cups of all-purpose flour
Filling:
- 1 cup of brown sugar
- 2 ½ tablespoons of ground cinnamon (We like to add a little bit more as we love cinnamon!)
- 1/3 cup of softened unsalted butter.
Cream Cheese Frosting:
- 4 ounces of softened cream cheese
- 1/4 cup of softened unsalted butter
- 1 ½ cups of powdered sugar
- 1/2 teaspoon of vanilla extract
- A pinch of salt
Instructions
1. Prepare the Dough
- In a small bowl, dissolve the yeast in the warm milk. Let it sit for about 5 minutes until it becomes frothy.
- In a large mixing bowl, combine the sugar, melted butter, eggs, and salt. Add the yeast mixture and mix well.
- Gradually add the flour, one cup at a time, stirring until a dough forms. If using a stand mixer, use the dough hook attachment.
- Knead the dough on a floured surface for about 5-7 minutes until it is smooth and elastic. Alternatively, knead with the mixer for about 5 minutes.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 to 1 ½ hours, or until doubled in size.
2. Prepare the Filling
- In a small bowl, combine the brown sugar and cinnamon.
- Roll out the dough on a floured surface into a rectangle approximately 16×21 inches in size.
- Spread the softened butter evenly over the dough, then sprinkle the cinnamon sugar mixture on top.
3. Roll and Cut
- In a small bowl, combine the brown sugar and cinnamon.

4. Second Rise
Cover the baking dish with a towel and let the buns rise for another 30 minutes, or until they have doubled in size.
5. Bake
- Preheat your oven to 350°F (175°C).
- Bake the cinnamon buns for 20-25 minutes, or until golden brown.
6. Prepare the Frosting
- In a medium bowl, beat the cream cheese and butter together until smooth.
- Gradually add the powdered sugar, vanilla extract, and salt. Beat until creamy and well combined.
7. Frost and Serve
- Spread the cream cheese frosting over the warm buns.
- Place 3 cinnamon buns in a column.
- Push chocolate sticks into each side of the middle cinnamon bun.
- Place smarties on the middle cinnamon bun for buttons.
- Wrap red laces between the top 2 cinnamon buns to make a scarf.
- Use an orange sprinkle for the nose.
- Place two edible eyes at the top.
- Finally, use chocolate chips to make a smile.
- Serve immediately and enjoy the soft, gooey, and delicious cinnamon buns!
