Ingredients You’ll Need

Step-by-Step Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.
Step 2: Make the Filling
In a small bowl, mix pumpkin puree, brown sugar, and pumpkin pie spice until smooth. Taste and adjust the sweetness if desired.
Step 3: Cut the Pumpkin Shapes
Unroll your pie crust and use a pumpkin-shaped cookie cutter (or trace around a paper template) to cut out pairs of pumpkins. Each hand pie needs two pieces – one for the top and one for the bottom.
Step 4: Add the Filling
Spoon about one tablespoon of the pumpkin mixture onto the center of a pumpkin cutout. Place another pumpkin cutout on top and gently press the edges together.
Use a fork to crimp the edges, sealing in the filling. This also gives the pies that classic rustic look.
Step 5: Add Details
If you’d like, use a small knife to make a few slits on top of each pie to look like pumpkin ridges. Brush each pie lightly with an egg wash (1 egg beaten with 1 tablespoon of milk).
Step 6: Sprinkle and Bake
For extra flavor and crunch, sprinkle the tops with a little cinnamon sugar. Bake for 18–22 minutes, or until golden brown and flaky.
Let them cool slightly before serving – the filling will be warm and soft inside!

- For crispier edges, chill the assembled pies in the fridge for 10 minutes before baking.
