This week we have been making butterfly cupcakes as part of our spring theme. Butterfly cupcakes were my favorite treat to bake as a kid.. And I love getting to make them again now. They’re a nice and easy recipe but they turn out great. You can also cheat and buy plain pre-made cupcakes too if you just want to do the decorating side with your students.

Supplies Needed
- Large mixing bowl.
- Measuring cups and spoons.
- Wooden spoon.
Cupcakes
- 1 2/3 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 2 large eggs
- 1/2 cup whole milk
- 1/4 cup sour cream (optional, for added moisture)
- 2 teaspoons vanilla extract
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
Buttercream Icing
- 1 cup (2 sticks) unsalted butter, at room temperature
- 3-4 cups powdered sugar, sifted
- 2-4 tablespoons heavy cream or milk
Instructions
Baking
- Preheat your oven to 350°F (175°C).
- Line a muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder and salt. Then set aside.
- In a large bowl mix the butter and sugar together until light and fluffy.
- Beat in the eggs one at a time.
- Add in the vanilla extract and mix to combine all the ingredients together.
- Now pour the medium bowl into the large bowl to combine all of the ingredients.
- Divide the mixture up into the cupcake cases.
- Bake in the oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean or with a few moist crumbs.
Decorating
- Mix together the butter and powdered sugar until a thick but smooth consistency.
- Use a spoon to dig out the top of the cupcake.
- Cut the removed cupcake piece in half.
- Spoon icing into the now open hole on the cupcake and around it to smooth it out.
- Place the two pieces cut from the cupcake next to each other to look like butterfly wings.
