Remember when I said St Patrick’s Day was one of my favourite holidays to celebrate in the classroom? It’s not just for crafts – it’s for the baking opportunities too! We do mix it up each week in our class and alternate between sweet and savoury baking. But, we could not miss out on these adorable rainbow cupcakes for St Patrick’s Day!
Ingredients
Now, we cheated. My kiddos are still working on their cookery skills, so we don’t want to overload them. For this reason, we bought pre-made cupcakes in the supermarket. I know, I know – we cheated. But, we took the children to the supermarket. They chose if they wanted vanilla or chocolate cupcakes. Then, we went to the till and paid for it all. So, we worked on a lot of life skills at the same time!
If you want to make the cupcakes yourself, theres lots of different quick and easy recipes you can find online. Otherwise this part, just includes the extra ingredients that you need to decorate the cupcakes.
- Rainbow fizzy sweets
- Buttercream icing – vanilla
- Icing sugar
- Water
- Blue food colouring
Directions
Once you have your cupcakes baked and cooled down ready to decorate (or cheated like us) just follow the quick and easy directions below.
- Mix together icing sugar and water and blue food colouring. You can find exact measurements on the back of the icing sugar box.
- Once it’s made and blue enough for you to be happy with – you might need to use a bit of food colouring to achieve this. Spread some blue icing on top of each cupcake in a circular motion. This is your ‘sky’.
- Next, use your buttercream icing and make two small dollops on each side of the cupcake, directly opposite each other. You can use a spoon or a piping bag. We like to use a piping bag just to work on some extra skills with my students.
- Now you need to cut up your rainbow fizzy strips into small pieces. Then, place each end into each of the buttercream icing blobs. You may need to hold them for a few seconds just to get them to stick and stay there.
- That’s it! You’re finished.
