For the cookies:

  • 1 cup (225g) butter, softened
  • 1 cup (200g) sugar
  • 1 large egg
  • 2 cups (250g) plain flour
  • ¾ cup (75g) cocoa powder
  • 1 tsp baking powder
  • Pinch of salt

For the filling:

  • ½ cup (115g) butter, softened
  • 1½ cups (180g) icing sugar
  • 1–2 tbsp milk
  • Optional: a few drops of purple or orange food coloring for a Halloween twist

Decorations:

  • Candy eyes
  • Small amount of icing or melted chocolate for sticking

Step-by-Step Instructions

Step 1: Make the Dough

In a large mixing bowl, cream together butter and sugar until light and fluffy. Add the egg and mix until combined.

Sift in the flour, cocoa powder, baking powder, and salt. Mix until a dough forms. If it’s a little soft, wrap it in cling film and chill in the fridge for 30 minutes.

Step 2: Roll and Cut

Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.

Roll the dough out on a lightly floured surface to about ¼ inch thickness. Use a bat-shaped cookie cutter to cut out as many bats as you can. Gather scraps, re-roll, and repeat until all dough is used.

Step 3: Bake

Place the bat shapes on the prepared tray and bake for 8–10 minutes. They should be firm but not hard. Cool completely on a wire rack before assembling.

Step 4: Make the Filling

In a bowl, beat butter until smooth. Gradually add icing sugar and milk until you reach a creamy consistency. Add food coloring if desired for a festive Halloween look.

Step 5: Assemble the Bats

Spread or pipe a small amount of filling on one bat cookie, then gently sandwich another on top. Press lightly so the filling peeks through just a little.

Step 6: Add the Eyes

Dab a little melted chocolate or icing on the back of each candy eye and stick them onto the top cookie. Let set for a few minutes before serving.

Tips for Success

  • No bat cookie cutter? Use a heart cutter and flip it upside down – instant bat wings!
  • For extra crunch, use half brown sugar and half white sugar in the dough.
  • These cookies can be stored in an airtight container for up to 4–5 days.
  • Want to make them allergy-friendly? Substitute gluten-free flour or dairy-free butter if needed.
